Zucchini Beef Casserole

A delicious zucchini and beef casserole that is perfect for a family dinner. It's savory, packed with flavor, and easy to prepare.

  • 1.5 pounds ground beef Lean or extra lean
  • 3 cups zucchini Sliced
  • 1 cup onion Chopped
  • 2 cups shredded cheddar cheese Divided
  • 1 jar spaghetti sauce About 24 ounces
  • 1 teaspoon Italian seasoning

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat until brown. Drain excess fat.
  • Stir in spaghetti sauce and Italian seasoning into the skillet.
  • In a greased 9x13 inch baking dish, layer half of the zucchini slices, half of the ground beef mixture, and half of the cheese. Repeat the layers.
  • Bake in the preheated oven for 35 to 40 minutes, or until zucchini is tender and cheese is bubbly.

Notes

For a spicier kick, add red pepper flakes to the beef mixture.
