  • 1 tablespoon Olive Oil
  • 1 cup Chopped Onion
  • 2 cloves Garlic minced
  • 2 cups Broccoli Florets
  • 2 cups Cauliflower Florets
  • 1 cup Carrot Slices
  • 1 can Cream of Mushroom Soup
  • 0.5 cup Milk
  • 0.5 cup Shredded Cheddar Cheese
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  • Add broccoli, cauliflower, and carrots to the skillet and cook for 5-7 minutes, until slightly tender.
  • In a bowl, combine cream of mushroom soup, milk, salt, and pepper. Pour over the vegetables in the skillet and stir to combine.
  • Pour the vegetable mixture into the prepared baking dish. Sprinkle with shredded cheddar cheese.
  • Bake for 30-35 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  • Let cool for a few minutes before serving.
