Instructions
Preparation Steps
Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
Add broccoli, cauliflower, and carrots to the skillet and cook for 5-7 minutes, until slightly tender.
In a bowl, combine cream of mushroom soup, milk, salt, and pepper. Pour over the vegetables in the skillet and stir to combine.
Pour the vegetable mixture into the prepared baking dish. Sprinkle with shredded cheddar cheese.
Bake for 30-35 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
Let cool for a few minutes before serving.
