Instructions
Preparation Steps
Preheat the oven to 400°F (200°C).
In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
Add ground turkey to the skillet. Cook until turkey is browned and cooked through.
Stir in the garlic powder, thyme, salt, and pepper. Add chicken broth and bring to a simmer.
Add the peas and carrots mix and cook for another 5 minutes.
Transfer the turkey mixture to a baking dish and spread evenly.
Top with mashed potatoes, spreading evenly over the turkey mixture.
Bake in the preheated oven for 20 minutes, or until the top is golden brown.
Notes
For an extra crispy topping, add some shredded cheese over the mashed potatoes before baking.
