Turkey Shepherd's Pie

A delicious and comforting Turkey Shepherd's Pie made with lean turkey and topped with creamy mashed potatoes.

  • 2 pounds ground turkey use lean turkey for healthier option
  • 1 cup frozen peas and carrots mix thawed
  • 1 cup onion chopped
  • 1 tablespoon olive oil
  • 3 cups mashed potatoes leftover or freshly prepared
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 cup chicken broth

Preparation Steps

  • Preheat the oven to 400°F (200°C).
  • In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  • Add ground turkey to the skillet. Cook until turkey is browned and cooked through.
  • Stir in the garlic powder, thyme, salt, and pepper. Add chicken broth and bring to a simmer.
  • Add the peas and carrots mix and cook for another 5 minutes.
  • Transfer the turkey mixture to a baking dish and spread evenly.
  • Top with mashed potatoes, spreading evenly over the turkey mixture.
  • Bake in the preheated oven for 20 minutes, or until the top is golden brown.

Notes

For an extra crispy topping, add some shredded cheese over the mashed potatoes before baking.
