Taco Stuffed Peppers

Instructions
Preparation Steps
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Stir in taco seasoning and water according to package instructions. Let simmer for 5 minutes.
Mix in cooked rice and half of the shredded cheese.
Fill each bell pepper half with beef mixture and place in baking dish.
Top with remaining cheese and cover with foil. Bake for 30 minutes.
Remove foil and bake for another 5 minutes or until cheese is bubbly.
Notes
Garnish with fresh cilantro and diced tomatoes before serving.
