Taco Stuffed Peppers

Delicious taco-flavored stuffed peppers that offer a healthy twist on a classic favorite.

  • 4 pieces bell peppers halved and seeded
  • 1 pound ground beef lean
  • 1 package taco seasoning low sodium
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup cooked rice

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Stir in taco seasoning and water according to package instructions. Let simmer for 5 minutes.
  • Mix in cooked rice and half of the shredded cheese.
  • Fill each bell pepper half with beef mixture and place in baking dish.
  • Top with remaining cheese and cover with foil. Bake for 30 minutes.
  • Remove foil and bake for another 5 minutes or until cheese is bubbly.

Notes

Garnish with fresh cilantro and diced tomatoes before serving.
