  • 2.5 pounds Yukon Gold potatoes peeled and quartered
  • 0.5 cup sour cream
  • 0.25 cup unsalted butter at room temperature
  • 0.25 cup milk warmed
  • 0.25 cup fresh chives chopped
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground, to taste

Preparation Steps

  • Place potatoes in a large pot, cover with cold water, and bring to a boil. Cook until tender, about 20-25 minutes.
  • Drain the potatoes and return to the pot. Mash over low heat, allowing all the steam to escape, before adding in sour cream, butter, and milk.
  • Season with salt and pepper, then fold in the chives. Serve warm.

Notes

Feel free to adjust the amount of butter and sour cream to your preference for a creamier texture.
