simple chickpea salad

A quick and easy chickpea salad perfect for sandwiches, wraps, or a light meal.

Ingredients
  

Main Ingredients

  • 2.5 can(s) chickpeas rinsed and drained
  • 0.5 cup celery finely chopped
  • 0.25 cup red onion finely chopped
  • 0.5 cup fresh dill chopped

Dressing

  • 0.5 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • salt to taste
  • black pepper to taste

Preparation Steps

  • In a medium bowl, mash the chickpeas with a fork or potato masher until mostly broken down but still with some texture.

  • Add the chopped celery, red onion, and fresh dill to the bowl with the mashed chickpeas.

  • In a separate small bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice.

  • Pour the dressing over the chickpea mixture and stir gently to combine. Season with salt and pepper to taste.

  • Serve immediately, or cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Notes

This chickpea salad is incredibly versatile. Enjoy it in sandwiches, on crackers, as a lettuce wrap filling, or even stuffed into bell peppers.
