This hearty Meatball Stroganoff offers a flavorful twist to the classic stroganoff with tender meatballs cooked in a creamy mushroom sauce.

  • 1.5 pounds ground beef or a mix of beef and pork
  • 1 cup breadcrumbs plain or seasoned
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 1 egg lightly beaten
  • 1 tablespoon olive oil
  • 2 cups mushrooms sliced
  • 1.5 cups beef broth
  • 0.5 cup sour cream
  • 2 tablespoons all-purpose flour

Preparation Steps

  • In a large bowl, mix together the ground beef, breadcrumbs, salt, pepper, and egg until well combined.
  • Shape the mixture into 1-inch meatballs.
  • Heat olive oil in a pan over medium heat and brown the meatballs on all sides, then set aside.
  • In the same pan, add mushrooms and cook until tender.
  • Sprinkle the flour over the mushrooms and stir well.
  • Gradually whisk in the beef broth and bring to a simmer.
  • Add the sour cream, return the meatballs to the pan, and simmer for 10 minutes.

Notes

Serve the Meatball Stroganoff over egg noodles or rice for a complete meal.
