  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter melted
  • 2 large eggs
  • 1 tablespoon lemon zest freshly grated
  • 0.25 cup lemon juice fresh
  • 0.5 cup milk
  • 1 cup blueberries fresh or frozen

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  • In a large bowl, mix together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the melted butter, eggs, lemon zest, lemon juice, and milk.
  • Combine the wet and dry ingredients, mixing until just combined.
  • Gently fold in the blueberries.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the loaf cool before slicing.

Notes

For an extra touch, drizzle a lemon glaze over the cooled loaf before serving.
