Preparation Steps
Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
In a medium bowl, combine graham cracker crumbs and sugar. Pour in melted butter and stir until well combined.

Press the crumb mixture evenly into the bottom of the prepared baking pan.
Bake the crust for 8-10 minutes, then let it cool completely.
In a large bowl, whisk together sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth.

Pour the filling over the cooled crust.
Refrigerate for at least 4 hours, or until set.
Once set, use the parchment paper overhang to lift the bars out of the pan. Cut into bars.
Serve chilled, topped with whipped cream and lime slices, if desired.
Notes
For a brighter lime flavor, add an extra teaspoon of lime zest. Ensure the bars are fully chilled before cutting for clean slices.
