Preparation Steps
In a large pot or Dutch oven, combine the chicken, ranch dressing mix, cream cheese, diced tomatoes and green chilies, black beans, corn, and chicken broth.
Bring to a simmer over medium heat, stirring occasionally until the cream cheese is melted and the chicken is cooked through (about 20-25 minutes).
Reduce heat to low and let simmer for another 5 minutes to allow flavors to meld.
Serve hot, topped with shredded cheddar cheese.
