  • 1 packet Ranch dressing mix Hidden Valley Ranch is recommended
  • 8 oz Cream cheese Softened
  • 10 oz Diced tomatoes and green chilies Rotel is a good choice
  • 1 can Black beans Drained and rinsed
  • 1 can Corn Drained
  • 1 cup Chicken broth Low sodium preferred
  • 1 cup Shredded cheddar cheese For topping

Preparation Steps

  • In a large pot or Dutch oven, combine the chicken, ranch dressing mix, cream cheese, diced tomatoes and green chilies, black beans, corn, and chicken broth.
  • Bring to a simmer over medium heat, stirring occasionally until the cream cheese is melted and the chicken is cooked through (about 20-25 minutes).
  • Reduce heat to low and let simmer for another 5 minutes to allow flavors to meld.
  • Serve hot, topped with shredded cheddar cheese.
