Add cottage cheese, feta, red wine vinegar, olive oil, honey, garlic, dill, salt, and pepper to a food processor. Pulse until completely smooth.
Taste and adjust vinegar and honey if needed. Add milk to thin the dip if desired and pulse briefly to combine.
Transfer to a serving bowl, garnish with toasted sesame seeds, extra dill, black pepper, and a drizzle of olive oil.
Serve immediately with pita chips, carrots, celery, and cucumber, or refrigerate until ready to serve.
