Preparation Steps

  • Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together gluten-free flour and powdered sugar.
  • Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • If using, add vanilla extract. Knead the dough until it comes together.
  • Roll out the dough to about 1/4 inch thickness and cut out desired shapes.
  • Place cookies on the prepared baking sheet and bake for 18-20 minutes, or until lightly golden.
  • Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
