Easy Shepherd's Pie

A classic comfort food, this easy Shepherd's Pie features a savory ground beef and vegetable filling topped with fluffy mashed potatoes.

Ingredients
  

For the Filling

  • 1.5 pound ground beef
  • 1 cup chopped onion
  • 2 cloves garlic minced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 0.5 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon salt

For the Topping

  • 2 pounds potatoes peeled and quartered
  • 0.5 cup milk
  • 4 tablespoons butter
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • For the filling: In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.

  • Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.

  • Stir in the frozen peas, frozen corn, beef broth, tomato paste, Worcestershire sauce, thyme, pepper, and salt. Bring to a simmer and cook for 5 minutes, stirring occasionally.

  • For the topping: While the filling is simmering, boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain well.

  • Mash the potatoes with milk, butter, salt, and pepper until smooth and creamy.

  • Pour the beef filling into a 9x13 inch baking dish.
  • Spread the mashed potatoes evenly over the beef filling.
  • Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
  • Let stand for 5-10 minutes before serving.

Notes

This recipe can be made ahead of time and reheated. For an extra rich topping, add a sprinkle of shredded cheddar cheese before baking.
