Cream Cheese Potato Bacon Soup

  • 4 cups potatoes peeled and diced
  • 8 slices bacon cooked and crumbled
  • 1 cup cream cheese softened
  • 4 cups chicken broth
  • 1 cup milk
  • 1 medium onion chopped

Preparation Steps

  • In a large pot, cook bacon until crispy. Remove and set aside.
  • In the same pot, add onions and cook until translucent.
  • Add potatoes and chicken broth, bring to a boil. Reduce heat and simmer until potatoes are tender.
  • Stir in cream cheese and milk, cook until well blended and heated through.
  • Add cooked bacon and season with salt and pepper to taste. Serve hot.

Notes

Garnish with chopped green onions or shredded cheese for extra flavor.
