Cowboy Cornbread Casserole

This Cowboy Cornbread Casserole is a hearty and satisfying one-dish meal featuring seasoned ground beef, sweet cornbread, and plenty of cheese.

  • 1.5 pounds ground beef use lean beef for less fat
  • 1 package cornbread mix such as Jiffy
  • 1 cup shredded cheddar cheese
  • 1 can diced tomatoes drained
  • 1 tablespoon chili powder

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Mix in the diced tomatoes and chili powder with the beef. Simmer for 5 minutes.
  • Transfer the beef mixture to a 9x13 inch baking dish. Top with shredded cheddar cheese.
  • Prepare the cornbread mix according to package instructions and spread over the cheese layer.
  • Bake in the preheated oven for 30 minutes or until cornbread is golden brown.

Notes

This dish can be served with a side of sour cream and chopped green onions for extra flavor.
