  • 1 lb chicken breasts boneless, skinless
  • 4 cups chicken broth
  • 1 can cream of chicken soup 10.5 oz
  • 6 pieces flour tortillas cut into strips
  • 1 tsp salt to taste
  • 1 tsp pepper to taste

Preparation Steps

  • In a large pot, combine chicken, chicken broth, and cream of chicken soup. Bring to a boil over medium-high heat.
  • Reduce heat to low, cover, and simmer for 25 minutes until chicken is cooked through.
  • Remove chicken and shred with two forks, then return to pot.
  • Add tortilla strips to the pot, cover, and simmer for an additional 10 minutes.
  • Season with salt and pepper to taste before serving.

Notes

This dish is best served warm and pairs well with a side of fresh vegetables.
