A hearty and comforting one-dish meal that combines all the flavors of a classic cheeseburger into an easy-to-make casserole. Ground beef, onions, cheese, and pickles are baked together with a creamy sauce and served over rice or noodles.
Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes. Add garlic and cook for 1 minute more.
Add ground beef to the skillet. Cook, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes. Drain excess fat.
Stir in condensed soup, milk, ketchup, mustard, salt, and pepper. Mix well.
Remove from heat and stir in half of the shredded cheddar cheese, diced pickles, and cooked rice or noodles.
Transfer the mixture to the prepared baking dish. Sprinkle the remaining cheddar cheese evenly over the top.
Bake uncovered for 25-30 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
Let cool for 5 minutes before serving. Enjoy warm.
