Cheeseburger Casserole

A hearty and comforting one-dish meal that combines all the flavors of a classic cheeseburger into an easy-to-make casserole. Ground beef, onions, cheese, and pickles are baked together with a creamy sauce and served over rice or noodles.

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 10.5 oz condensed cream of mushroom soup 1 can
  • 0.5 cup milk
  • 1 cup shredded cheddar cheese, divided
  • 0.5 cup diced pickles
  • 1 cup cooked rice or egg noodles
  • 1 tablespoon ketchup
  • 1 tablespoon yellow mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil

Preparation Steps

  • Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes. Add garlic and cook for 1 minute more.
  • Add ground beef to the skillet. Cook, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes. Drain excess fat.
  • Stir in condensed soup, milk, ketchup, mustard, salt, and pepper. Mix well.
  • Remove from heat and stir in half of the shredded cheddar cheese, diced pickles, and cooked rice or noodles.
  • Transfer the mixture to the prepared baking dish. Sprinkle the remaining cheddar cheese evenly over the top.
  • Bake uncovered for 25-30 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  • Let cool for 5 minutes before serving. Enjoy warm.

Notes

Serve with a side salad or steamed vegetables for a complete meal. Leftovers can be stored in the refrigerator for up to 3 days.
