Cajun White Chicken Chili

A creamy and flavorful Cajun White Chicken Chili recipe, perfect for a cozy night in. This recipe is easy to follow and packed with delicious Cajun spices.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp paprika
  • 1 can white beans, rinsed and drained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 0.5 cup chopped cilantro

Preparation Steps

  • In a large pot or Dutch oven, brown the chicken breasts over medium-high heat. Remove chicken and set aside.
  • Add onion and garlic to the pot and cook until softened, about 5 minutes.
  • Stir in Cajun seasoning and paprika. Cook for 1 minute.
  • Return chicken to the pot. Add white beans and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Stir in heavy cream and cilantro. Heat through. Serve hot.

Notes

Garnish with extra cilantro and a dollop of sour cream, if desired.
