Banana Pudding
A classic Southern dessert featuring layers of vanilla pudding, fresh bananas, and vanilla wafers, topped with whipped cream or meringue.

Instructions
Preparation Steps
In a medium saucepan, whisk together sugar, flour, and salt.
Gradually whisk in milk until smooth.
Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil.
Boil for 1 minute, then remove from heat.
Gradually stir about 0.5 cup of hot mixture into beaten egg yolks to temper, then pour egg mixture back into saucepan.
Return to heat and cook for 2 more minutes, stirring constantly.
Remove from heat and stir in butter and vanilla until smooth. Let cool slightly.
In a 2-quart serving dish, layer vanilla wafers, sliced bananas, and pudding. Repeat layers, ending with pudding on top.
Top with whipped cream or meringue.
Chill for at least 4 hours before serving.
Notes
For best results, use very ripe bananas and chill the pudding thoroughly to allow flavors to meld.
