Zucchini Garlic Bites

These Zucchini Garlic Bites are crispy on the outside, tender on the inside, and packed with savory garlic flavor. Perfect as an appetizer or a side dish!

  • 2 medium zucchini grated and squeezed dry
  • 0.5 cup Parmesan cheese grated
  • 0.5 cup all-purpose flour
  • 2 large eggs beaten
  • 3 cloves garlic minced
  • 0.25 cup fresh parsley chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup olive oil for frying

Preparation Steps

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the grated zucchini, grated Parmesan cheese, all-purpose flour, beaten eggs, minced garlic, chopped parsley, salt, and pepper. Mix until well combined.
  • Using a tablespoon, scoop portions of the mixture and form them into small patties or balls. Place them on the prepared baking sheet.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Carefully place the zucchini bites into the hot oil, being careful not to overcrowd the pan. Cook for 2-3 minutes per side, until golden brown and crispy.
  • Remove the zucchini bites from the skillet and place them on a wire rack or paper towel-lined plate to drain any excess oil.
  • Serve warm with your favorite dipping sauce.

Notes

These bites can also be baked in the oven for a healthier option. Bake for 15-20 minutes, flipping halfway through, until golden and crispy.
