Whole Roasted Carrots

These whole roasted carrots are tender, sweet, and incredibly easy to make. A perfect side dish for any meal!

  • 1 pound carrots scrubbed and trimmed
  • 2 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh rosemary chopped (optional)

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the trimmed carrots with olive oil, salt, pepper, and chopped rosemary (if using) until evenly coated.
  • Spread the carrots in a single layer on a baking sheet.
  • Roast for 35-45 minutes, or until the carrots are tender and slightly caramelized, flipping halfway through.
  • Serve hot.

Notes

For extra sweetness, you can drizzle a little honey or maple syrup over the carrots before roasting.
