White Chicken Enchiladas

A delicious and creamy white sauce enchilada recipe with a hint of spice and loads of flavor.

Ingredients
  

Main Ingredients

  • 2 cups cooked chicken breast shredded
  • 8 pieces flour tortillas
  • 2 cups Monterey Jack cheese shredded
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 can diced green chilies

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • In a skillet, melt butter over medium heat. Stir in flour and cook for 1 minute.
  • Gradually whisk in the chicken broth until smooth. Heat until the mixture thickens, then remove from heat.
  • Stir in sour cream and green chilies. Set aside.
  • Fill each tortilla with chicken and cheese, roll them up and place in a 9x13 inch baking dish.
  • Pour the sour cream sauce over the rolled tortillas and top with remaining cheese.
  • Bake for 25-30 minutes, or until cheese is melted and bubbly.

Notes

Optional: Garnish with chopped cilantro and serve with lime wedges.
