  • 2 lbs Chicken Breast Cut into 1-inch cubes
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 4 cups Chicken Broth
  • 1 can Great Northern Beans Drained and rinsed (15 oz)
  • 1 can Canned Green Chilies Diced (4 oz)
  • 1 tsp Cumin
  • 0.5 tsp Oregano
  • 0.25 tsp Cayenne Pepper Optional
  • 0.25 cup Sour Cream For topping

Preparation Steps

  • In a large pot or Dutch oven, sauté the diced onion over medium heat until softened, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Stir in the cubed chicken breast and cook until lightly browned on all sides.
  • Pour in the chicken broth, and add the great northern beans, diced green chilies, cumin, oregano, and cayenne pepper (if using).
  • Bring the mixture to a boil, then reduce heat and simmer for 20 minutes, or until the chicken is cooked through.
  • Serve hot, topped with sour cream and any other desired toppings.
