White Chicken Chili

A creamy and flavorful white chicken chili recipe, perfect for a chilly evening. This recipe is easy to make and packed with protein.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground chili powder
  • 15 oz cannellini beans, rinsed and drained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 0.5 cup chopped cilantro

Preparation Steps

  • Cook chicken breasts until cooked through. Shred chicken.
  • Sauté onion and garlic in a large pot.
  • Add cumin and chili powder; cook for 1 minute.
  • Stir in chicken, beans, and chicken broth. Bring to a simmer.
  • Reduce heat and simmer for 15 minutes.
  • Stir in heavy cream and cilantro. Serve hot.

Notes

Garnish with extra cilantro and a dollop of sour cream if desired.
