Whipped Feta Strawberries

A delightful and creamy whipped feta dip served with sweet roasted strawberries, perfect as an appetizer or dessert.

Ingredients
  

Whipped Feta

  • 0.5 pound Feta cheese crumbled
  • 0.25 cup Cream cheese softened
  • 0.25 cup Olive oil
  • 2 tablespoons Lemon juice freshly squeezed
  • 0.125 teaspoon Black pepper freshly ground

Roasted Strawberries

  • 1 pound Strawberries hulled and quartered
  • 2 tablespoons Honey
  • 0.5 tablespoons Balsamic glaze

Instructions
 

Prepare Whipped Feta

  • In a food processor, combine the crumbled feta cheese, softened cream cheese, olive oil, and lemon juice.
  • Process until smooth and creamy. Scrape down the sides as needed.
  • Season with freshly ground black pepper. Taste and adjust seasonings if necessary.

Roast Strawberries

  • Preheat your oven to 400°F (200°C).
  • In a bowl, toss the quartered strawberries with honey and balsamic glaze.
  • Spread the strawberries in a single layer on a baking sheet lined with parchment paper.
  • Roast for 15-20 minutes, or until the strawberries are softened and slightly caramelized.

Assemble and Serve

  • Spoon the whipped feta into a serving bowl.
  • Top the whipped feta with the warm roasted strawberries.
  • Serve immediately with crackers, baguette slices, or fruit.

Notes

This recipe is best served warm. You can also add a sprinkle of fresh mint or basil for extra flavor.
