Instructions
Prepare Whipped Feta
In a food processor, combine the crumbled feta cheese, softened cream cheese, olive oil, and lemon juice.
Process until smooth and creamy. Scrape down the sides as needed.
Season with freshly ground black pepper. Taste and adjust seasonings if necessary.
Roast Strawberries
Preheat your oven to 400°F (200°C).
In a bowl, toss the quartered strawberries with honey and balsamic glaze.
Spread the strawberries in a single layer on a baking sheet lined with parchment paper.
Roast for 15-20 minutes, or until the strawberries are softened and slightly caramelized.
Assemble and Serve
Spoon the whipped feta into a serving bowl.
Top the whipped feta with the warm roasted strawberries.
Serve immediately with crackers, baguette slices, or fruit.
Notes
This recipe is best served warm. You can also add a sprinkle of fresh mint or basil for extra flavor.
