Refreshing and incredibly easy, these Watermelon Feta Skewers are the perfect appetizer or side dish for any summer gathering. Sweet watermelon meets salty feta with a hint of mint for a burst of flavor.
Thread a cube of watermelon onto a small skewer. Leave a little space.
Follow with a cube of feta cheese. If using larger feta cubes, you may want to cut them down to size to fit on the skewer proportionally with the watermelon.
Add a few fresh mint leaves, tucking them around the feta cheese.
Repeat the layering process if your skewers are long enough. You want a visually appealing stack.
Arrange the skewers on a serving platter.
Just before serving, drizzle the skewers with balsamic glaze.
