Unstuffed Pepper Skillet

A quick and easy one-pan meal that brings all the delicious flavors of stuffed peppers without the fuss of stuffing!

Ingredients

  • 1 pound ground beef
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 cups bell peppers any color, chopped
  • 1 can diced tomatoes 15 ounces, undrained
  • 1 can tomato sauce 8 ounces
  • 1 cup cooked rice
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup shredded cheese cheddar or Monterey Jack, optional

Preparation Steps

  • In a large skillet over medium-high heat, cook the ground beef until browned. Drain off any excess grease.
  • Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the chopped bell peppers, diced tomatoes (with their juice), tomato sauce, cooked rice, oregano, basil, salt, and pepper. Stir to combine.
  • Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the peppers are tender and the flavors have melded.
  • If using, sprinkle the shredded cheese over the top during the last few minutes of cooking and let it melt.
  • Serve hot.

Notes

This recipe is very versatile. Feel free to add other vegetables like corn or peas. For a spicier version, add a pinch of red pepper flakes.
