Whisk flour, cocoa powder, and salt together in a medium bowl.
Beat butter and sugar on medium-high speed for about 3 minutes, then beat in the egg yolks one at a time followed by vanilla and almond extract.
Beat the dry ingredients into the wet ingredients a little at a time, alternating with milk and finishing with the flour mixture.
Refrigerate the tightly wrapped dough for at least 1 hour.
Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
Roll the dough into 1-inch balls, coat each with egg white, and roll in chopped pecans.
Indent each ball with the underside of a teaspoon and bake for 13 minutes.
