A hearty and comforting breakfast casserole made with scrambled eggs, ground sausage, cheese, and crispy tater tots, baked to golden perfection.

Instructions
Preparation Steps
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
In a large skillet over medium heat, cook the ground sausage and onion until sausage is browned and onion is soft. Drain excess grease and set aside.
In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
Spread the cooked sausage mixture evenly in the prepared baking dish. Sprinkle 1.5 cups of shredded cheddar cheese over the sausage.
Pour the egg mixture over the cheese and sausage layer.
Arrange frozen tater tots in a single layer on top of the egg mixture, covering completely.
Sprinkle the remaining 0.5 cup of cheddar cheese over the tater tots.
Bake for 40–45 minutes, or until the eggs are set and the tater tots are golden brown and crispy.
Let cool for 5–10 minutes before slicing. Garnish with chopped green onions if desired.
Notes
For a spicier kick, use spicy breakfast sausage or add a pinch of red pepper flakes to the egg mixture.
