Tater Tot Breakfast Casserole

A hearty and comforting breakfast casserole made with scrambled eggs, ground sausage, cheese, and crispy tater tots, baked to golden perfection.

  • 1 pound ground breakfast sausage
  • 1 small onion, finely chopped
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 2 cups shredded cheddar cheese, divided
  • 2 cups frozen tater tots
  • 0.25 cup chopped green onions optional, for garnish

Preparation Steps

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • In a large skillet over medium heat, cook the ground sausage and onion until sausage is browned and onion is soft. Drain excess grease and set aside.
  • In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
  • Spread the cooked sausage mixture evenly in the prepared baking dish. Sprinkle 1.5 cups of shredded cheddar cheese over the sausage.
  • Pour the egg mixture over the cheese and sausage layer.
  • Arrange frozen tater tots in a single layer on top of the egg mixture, covering completely.
  • Sprinkle the remaining 0.5 cup of cheddar cheese over the tater tots.
  • Bake for 40–45 minutes, or until the eggs are set and the tater tots are golden brown and crispy.
  • Let cool for 5–10 minutes before slicing. Garnish with chopped green onions if desired.

Notes

For a spicier kick, use spicy breakfast sausage or add a pinch of red pepper flakes to the egg mixture.
