Tacos Dorados

Ingredients
- 12 corn tortillas warmed
- 1 pound ground beef
- 2 medium russet potatoes peeled and diced
- 1/2 white onion finely chopped
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt plus more for potatoes
- 1/2 teaspoon black pepper
- 2 cups vegetable oil for frying
- 1 cup shredded lettuce for serving
- 1/2 cup crumbled queso fresco for serving
Instructions
Boil the diced potatoes in salted water until fork-tender, about 8 minutes. Drain well.
Cook the beef and onion in a skillet until browned. Stir in garlic, cumin, salt, and pepper, then fold in the potatoes.
Warm the tortillas until pliable. Add filling to each, fold, and secure if needed.
Heat oil to 350°F. Fry tacos in batches until crisp and golden, about 2 to 3 minutes per side.
Drain on a rack or paper towels. Serve hot with lettuce and queso fresco.
