Taco Rice Casserole

This Taco Rice Casserole combines flavorful beef, fresh vegetables, and hearty rice into a deliciously baked dish that is perfect for any family dinner.

  • 1 pound ground beef preferably lean
  • 1 cup white rice uncooked
  • 1 can diced tomatoes drained
  • 1 packet taco seasoning
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 cup corn frozen

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat.
  • Add taco seasoning and water according to the packet instructions. Stir until well combined.
  • In a large bowl, combine cooked beef, rice, diced tomatoes, corn, and half of the shredded cheese. Mix thoroughly.
  • Transfer the mixture into a greased baking dish and top with the remaining cheese.
  • Bake for 25-30 minutes or until the cheese is melted and bubbly.
  • Serve hot and enjoy!

Notes

You can top this casserole with sour cream or guacamole for extra flavor.
