Taco Pasta Salad

This Taco Pasta Salad is a delightful blend of Mexican flavors and pasta, perfect for summer gatherings or a quick dinner.

Ingredients
  

Main Ingredients

  • 8 oz pasta any short pasta like rotini or bowtie
  • 1 lb ground beef lean
  • 1 packet taco seasoning low sodium
  • 1 cup diced tomatoes drained
  • 1 cup shredded cheddar cheese
  • 1 cup chopped lettuce
  • 0.5 cup sliced olives optional
  • 0.5 cup sour cream optional

Instructions
 

Preparation Steps

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  • Add the taco seasoning and a little water to the beef. Simmer until the sauce thickens.
  • In a large bowl, combine the cooked pasta, beef mixture, diced tomatoes, cheese, and lettuce.
  • Toss the salad to combine. Add olives and a dollop of sour cream if desired.

Feel free to add your favorite taco toppings like avocado or jalapenos!
