Instructions
Preparation Steps
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
Beat in the egg, vanilla extract, and almond extract (if using) until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Roll dough out on a lightly floured surface to about 1/4-inch thickness.
Cut into desired shapes using cookie cutters and place on prepared baking sheets, spacing 1 inch apart.
Bake for 8-10 minutes, or until edges are lightly golden. Do not overbake.
Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
These cookies are perfect for decorating with royal icing or sprinkles. Store in an airtight container for up to one week.
