Stuffed Bell Peppers
Tender bell peppers filled with savory beef, rice, tomato sauce, and melted mozzarella.

Ingredients
- 4 large bell peppers halved and seeded
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small yellow onion diced
- 2 cloves garlic minced
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup cooked rice
- 1 cup tomato sauce
- 1 cup shredded mozzarella
Instructions
Preheat the oven to 375°F and place the pepper halves cut-side up in a baking dish.
Warm the oil in a skillet over medium heat. Cook the beef and onion until the beef is browned and the onion is tender; drain excess fat.
Stir in the garlic, Italian seasoning, salt, and pepper and cook for 30 seconds.
Fold in the cooked rice and tomato sauce until the filling is evenly combined.
Spoon the filling into the pepper halves and cover the dish loosely with foil.
Bake for 30 minutes, then remove the foil and top with mozzarella.
Bake for 10 to 15 minutes more, until the peppers are tender and the cheese is melted and lightly browned.
Rest for 5 minutes before serving.
Choose peppers of similar size so they finish together.
Let the filling cool slightly before stuffing if it is very hot.
