  • 8 oz penne pasta uncooked
  • 1 cup mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated
  • 1 clove garlic minced
  • 1.5 cups whole milk
  • 1 can artichoke hearts drained and chopped
  • 3 cups baby spinach fresh

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • Cook the pasta according to package instructions, then drain and set aside.
  • In a large pan, sauté garlic in olive oil until fragrant. Add spinach and cook until wilted.
  • Stir in milk and cheeses, cook until the cheese is melted and the mixture is creamy.
  • Add artichokes and cooked pasta to the cheese mixture, stirring to combine.
  • Transfer the mixture to a baking dish, sprinkle additional mozzarella on top, and bake for 20 minutes.
  • Remove from the oven and let cool slightly before serving.
