Snickerdoodle Cookie Bars

These snickerdoodle cookie bars are a delicious and easy way to enjoy the classic snickerdoodle flavor in a convenient bar form. Perfect for parties or a simple treat!

Ingredients
  

Cookie Dough

  • 0.5 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Cinnamon Sugar Topping

  • 0.25 cup granulated sugar
  • 1 tablespoon ground cinnamon

Preparation Steps

  • Preheat oven to 375°F (190°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  • Beat in the egg and vanilla extract until well combined.

  • In a separate medium bowl, whisk together the flour, baking soda, and salt.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • In a small bowl, combine the cinnamon sugar topping ingredients: granulated sugar and ground cinnamon.

  • Press about two-thirds of the cookie dough evenly into the prepared baking pan.
  • Sprinkle the cinnamon sugar topping evenly over the dough.
  • Dollop the remaining cookie dough over the cinnamon sugar and gently spread it to cover as much as possible.
  • Bake for 20-25 minutes, or until the edges are golden brown and the center is set.
  • Let cool completely in the pan before cutting into bars.

Notes

For extra soft bars, be careful not to overbake. You can also add a pinch of cream of tartar to the dough for a tangier snickerdoodle flavor.
