Slow Cooker Tuscan Chicken with Spinach and Sun-Dried Tomatoes

Ingredients
- 1 1/2 pounds boneless skinless chicken thighs
- 3 ounces baby spinach
- 1 cup grated Parmesan cheese
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes sliced and packed in oil
- 1/2 cup chicken stock
- 4 cloves garlic minced
- 3 tablespoons unsalted butter
- 1 tablespoon sun-dried tomato oil
- 2 teaspoons dried parsley
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon dried oregano
- 1/4 teaspoon ground pepper
Instructions
Warm butter, tomato oil, and garlic briefly; add stock and cream, simmer until thickened, then stir in Parmesan.
Season chicken in the slow cooker with basil, oregano, parsley, salt, and pepper.
Top with sun-dried tomatoes and sauce; cook 3 hours on high or 6 hours on low.
Remove chicken, stir spinach into the sauce until wilted, and serve sauce over chicken.
