  • 2 lb Beef Stew Meat cut into 1-inch cubes
  • 6 cups Beef Broth low sodium
  • 1 cup Diced Tomatoes canned
  • 1 cup Carrots chopped
  • 1 cup Celery chopped
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 1 tsp Salt or to taste
  • 0.5 tsp Black Pepper or to taste

Preparation Steps

  • In a large skillet, brown the beef stew meat over medium-high heat. Season with salt and pepper.
  • Transfer the browned beef to a slow cooker.
  • Add the beef broth, diced tomatoes, carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper to the slow cooker.
  • Stir well to combine all ingredients.
  • Cover and cook on low for 8 hours or on high for 4 hours.
  • Once the soup is cooked, taste and adjust seasonings as needed.
  • Serve hot and enjoy!

Notes

Garnish with fresh parsley or a dollop of sour cream for added flavor.
