  • 1.5 cups diced tomatoes canned, undrained
  • 1 cup green bell pepper chopped
  • 0.5 cup black olives sliced
  • 3 cloves garlic minced
  • 1 tbsp Italian seasoning
  • 0.5 tsp red pepper flakes optional
  • 0.25 cup chicken broth
  • 0.25 cup grated Parmesan cheese for serving

Preparation Steps

  • Place the chicken breasts in the bottom of the slow cooker.
  • Add the diced tomatoes, green bell pepper, black olives, garlic, Italian seasoning, and red pepper flakes.
  • Pour the chicken broth over the ingredients and stir gently to combine.
  • Cover and cook on low for 4 hours or until the chicken is cooked through and tender.
  • Serve hot, sprinkled with grated Parmesan cheese.

Notes

For extra flavor, serve with warm crusty bread or over cooked pasta. Leftovers can be refrigerated for up to 3 days.
