Shrimp Quesadilla

A quick and easy recipe for delicious shrimp quesadillas. Perfect for a weeknight meal!

  • 8 oz cooked shrimp
  • 2 count large flour tortillas
  • 1 cup shredded cheddar cheese
  • 0.5 cup salsa
  • 1 tablespoon butter

Instructions
 

Preparation Steps

  • Spread butter on one side of each tortilla.
  • Place one tortilla, butter-side down, in a skillet over medium heat.
  • Sprinkle half of the cheese over the tortilla. Top with half of the shrimp and salsa.
  • Top with the remaining cheese and shrimp.
  • Place the second tortilla on top, butter-side up.
  • Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted and bubbly.
  • Cut into wedges and serve immediately.

Notes

For extra flavor, add some chopped cilantro or green onions to the quesadillas.
