This shrimp fried rice is a quick and delicious dish loaded with juicy shrimp and seasonings. Perfect for a quick lunch or dinner.

shrimp
peeled and deveined

cooked rice
preferably day-old

soy sauce
low sodium

peas and carrots
frozen mix

tablespoons
vegetable oil
2
cloves
garlic
minced

eggs
beaten
Instructions
Preparation Steps
Heat oil in a large pan over medium-high heat. Add garlic and sauté for 30 seconds.
Add shrimp and cook until pink, approximately 3-4 minutes. Remove from pan and set aside.
In the same pan, add more oil if needed, and pour in the beaten eggs. Scramble until just set.
Add rice, peas and carrots, and soy sauce to the pan. Stir-fry everything together for another 3 minutes.
Return shrimp to the pan and toss to combine. Serve hot.
Notes
For extra flavor, garnish with chopped green onions before serving.
