shrimp fried rice

This shrimp fried rice is a quick and delicious dish loaded with juicy shrimp and seasonings. Perfect for a quick lunch or dinner.

Ingredients
  

Main Ingredients

  • 1.5 cups shrimp peeled and deveined
  • 2 cups cooked rice preferably day-old
  • 1 tablespoon soy sauce low sodium
  • 0.5 cup peas and carrots frozen mix
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 2 eggs beaten

Instructions
 

Preparation Steps

  • Heat oil in a large pan over medium-high heat. Add garlic and sauté for 30 seconds.
  • Add shrimp and cook until pink, approximately 3-4 minutes. Remove from pan and set aside.
  • In the same pan, add more oil if needed, and pour in the beaten eggs. Scramble until just set.
  • Add rice, peas and carrots, and soy sauce to the pan. Stir-fry everything together for another 3 minutes.
  • Return shrimp to the pan and toss to combine. Serve hot.

Notes

For extra flavor, garnish with chopped green onions before serving.
