Sheet Pan Sausage and Veggies

An easy and delicious sheet pan dinner with sausage, bell peppers, onions, and potatoes, roasted to perfection.

  • 1 lb Sausage (Italian or Andouille) cut into 1-inch pieces
  • 1 large Red Bell Pepper cut into 1-inch pieces
  • 1 large Yellow Bell Pepper cut into 1-inch pieces
  • 1 large Onion cut into wedges
  • 1.5 lb Potatoes (Yukon Gold or Red) cut into 1-inch pieces
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Italian Herbs
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  • In a large bowl, toss the sausage, bell peppers, onion, and potatoes with olive oil, Italian herbs, salt, and pepper.
  • Spread the mixture in a single layer on the prepared baking sheet.
  • Bake for 30-35 minutes, or until the sausage is cooked through and the vegetables are tender, flipping halfway through.
  • Serve immediately.

Notes

For extra flavor, add a sprinkle of Parmesan cheese during the last 5 minutes of baking. You can also add other vegetables like zucchini or broccoli.
