Instructions
Preparation Steps
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
In a large bowl, toss the sausage, bell peppers, onion, and potatoes with olive oil, Italian herbs, salt, and pepper.
Spread the mixture in a single layer on the prepared baking sheet.
Bake for 30-35 minutes, or until the sausage is cooked through and the vegetables are tender, flipping halfway through.
Serve immediately.
Notes
For extra flavor, add a sprinkle of Parmesan cheese during the last 5 minutes of baking. You can also add other vegetables like zucchini or broccoli.
