  • 1.5 pounds Italian sausage sweet or spicy, cut into 1-inch pieces
  • 2 large bell peppers any color, sliced
  • 1 large onion sliced
  • 2 tablespoons olive oil
  • 0.5 teaspoons dried oregano
  • 0.5 teaspoons garlic powder
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Preparation Steps

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine the Italian sausage pieces, sliced bell peppers, and sliced onion.

  • Drizzle with olive oil and sprinkle with dried oregano, garlic powder, salt, and black pepper. Toss to coat everything evenly.

  • Spread the mixture in a single layer on the prepared baking sheet.
  • Bake for 25-30 minutes, or until the sausage is cooked through and browned, and the vegetables are tender and slightly caramelized. Stir halfway through cooking.
  • Serve hot. This dish is great on its own, over rice, or in a hoagie roll.

Notes

Feel free to add other vegetables like zucchini or mushrooms. A sprinkle of red pepper flakes can add a nice kick.
