Sausage Pancake Muffins

Easy and delicious sausage pancake muffins are perfect for breakfast or brunch! This recipe combines fluffy pancakes with savory sausage in a convenient muffin form.

  • 0.5 pound breakfast sausage cooked and crumbled
  • 2 cups pancake mix prepared according to package directions
  • 1 large egg
  • 1.5 cups milk
  • 2 tablespoons vegetable oil

Preparation Steps

  • Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  • In a large bowl, whisk together the pancake mix, egg, milk, and vegetable oil until just combined. Do not overmix.
  • Gently fold in the crumbled cooked sausage.

  • Pour the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
