Rolo Sugar Cookie Cups

These Rolo Sugar Cookie Cups are a delicious combination of soft sugar cookies and gooey caramel chocolates, perfect for any occasion!

  • 2.5 cups all-purpose flour sifted
  • 1 cup unsalted butter softened
  • 1.5 cups granulated sugar
  • 2 large eggs at room temperature
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 24 Rolo chocolates unwrapped

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease a mini muffin tin.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Add in eggs and vanilla, beating well.
  • Gradually add in flour and baking powder, mixing until combined.
  • Scoop dough into the prepared muffin tin, filling each about 3/4 full.
  • Bake for 8-10 minutes or until edges are golden. Remove from oven and immediately press a Rolo into the center of each cookie cup.
  • Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

These cookie cups are best enjoyed fresh, but they can be stored in an airtight container for up to 3 days.
