Raspberry Linzer Cookies

These delightful Raspberry Linzer Cookies are perfect for any occasion. They feature a buttery shortbread crust filled with a sweet raspberry jam.

  • 1 cup all-purpose flour
  • 0.5 cup powdered sugar
  • 0.5 cup cold unsalted butter cubed
  • 1 teaspoon vanilla extract
  • 1 cup raspberry jam

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • Combine flour and powdered sugar in a bowl. Cut in cold butter using a pastry blender or your fingers until mixture resembles coarse crumbs.
  • Stir in vanilla extract. Form dough into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  • Roll out dough on a lightly floured surface to 1/8 inch thickness. Use cookie cutters to cut out cookies.
  • Place half of the cookies onto baking sheets. Top with a teaspoon of raspberry jam and cover with remaining cookies.
  • Bake for 10-12 minutes, or until edges are lightly golden.
  • Let cool on baking sheets before serving.

Store cookies in an airtight container at room temperature for up to 3 days.
