Instructions
Preparation Steps
Preheat oven to 350°F (175°C).
Combine flour and powdered sugar in a bowl. Cut in cold butter using a pastry blender or your fingers until mixture resembles coarse crumbs.
Stir in vanilla extract. Form dough into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
Roll out dough on a lightly floured surface to 1/8 inch thickness. Use cookie cutters to cut out cookies.
Place half of the cookies onto baking sheets. Top with a teaspoon of raspberry jam and cover with remaining cookies.
Bake for 10-12 minutes, or until edges are lightly golden.
Let cool on baking sheets before serving.
