Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts sliced into thin strips
- 2 tablespoons olive oil divided
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 medium yellow onion sliced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1 lime juiced
Instructions
Whisk the chili powder, cumin, smoked paprika, and salt in a small bowl. Toss the chicken with half of the spice mixture.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 5 to 6 minutes, turning once, until browned and cooked through. Transfer it to a plate.
Add the remaining oil to the skillet. Cook the onion and peppers for 6 to 7 minutes, stirring occasionally, until lightly charred and tender-crisp.
Return the chicken to the skillet and sprinkle in the remaining spice mixture. Toss for 1 to 2 minutes, then remove from the heat and add the lime juice.
