Potato Pancakes Recipe

Crispy potato pancakes, perfect as a side dish or a light meal. Easy to make with simple ingredients.

  • 2 lbs Russet potatoes
  • 1 medium onion finely chopped
  • 0.5 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 large eggs
  • 0.25 cup vegetable oil

Preparation Steps

  • Peel and grate the potatoes. Squeeze out excess moisture using a clean kitchen towel.
  • Combine grated potatoes, onion, flour, salt, and pepper in a large bowl. Gently mix in the eggs.
  • Heat vegetable oil in a large skillet over medium heat. Drop spoonfuls of the potato mixture into the hot oil.
  • Cook for 3-4 minutes per side, or until golden brown and crispy.
  • Serve hot and enjoy!

Notes

For extra flavor, add some grated cheese or herbs to the potato mixture.
