Preparation Steps
Preheat oven to 350°F (175°C).
Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch pie plate.
Bake crust for 8-10 minutes. Let cool slightly.
In a large bowl, beat cream cheese and sugar until smooth. Mix in sour cream, eggs, and vanilla.
Fold in chopped pistachios. Pour filling into the cooled crust.
Bake for 45-50 minutes, or until the center is just set. Let cool completely before refrigerating for at least 4 hours.
Garnish with extra chopped pistachios before serving.
Notes
For a smoother filling, ensure cream cheese is at room temperature. Store leftovers in the refrigerator.
