Ingredients
  

Graham Cracker Crust

  • 1.5 cups Graham Cracker Crumbs
  • 0.33 cup Granulated Sugar
  • 0.5 cup Unsalted Butter, melted

Cheesecake Filling

  • 24 oz Cream Cheese, softened
  • 1 cup Granulated Sugar
  • 0.5 cup Sour Cream
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • 0.5 cup Pistachios, shelled and chopped Reserve some for topping

Instructions
 

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch pie plate.
  • Bake crust for 8-10 minutes. Let cool slightly.
  • In a large bowl, beat cream cheese and sugar until smooth. Mix in sour cream, eggs, and vanilla.
  • Fold in chopped pistachios. Pour filling into the cooled crust.
  • Bake for 45-50 minutes, or until the center is just set. Let cool completely before refrigerating for at least 4 hours.
  • Garnish with extra chopped pistachios before serving.

Notes

For a smoother filling, ensure cream cheese is at room temperature. Store leftovers in the refrigerator.
