Instructions
Preparation Steps
Preheat oven to 400°F (200°C).
In a large bowl, combine ground chicken, breadcrumbs, onion, garlic powder, ginger, salt, and pepper. Mix well.
Roll the mixture into 1-inch meatballs.
Place the meatballs on a baking sheet lined with parchment paper.
Bake for 15-20 minutes, or until cooked through.
In a small bowl, whisk together soy sauce, brown sugar, pineapple juice, cornstarch, and water.
In a saucepan, bring the sauce to a boil over medium heat. Reduce heat and simmer for 5 minutes, or until thickened.
Add the meatballs to the sauce and toss to coat.
Notes
Serve the meatballs over rice or noodles. Garnish with pineapple chunks and sesame seeds.
