Pineapple Teriyaki Chicken Meatballs

Delicious and easy chicken meatballs with a sweet and savory pineapple teriyaki glaze. Perfect for a quick weeknight dinner!

  • 1 lb Ground chicken
  • 0.5 cup Breadcrumbs
  • 0.25 cup Chopped onion
  • 1 tsp Garlic powder
  • 0.5 tsp Ginger
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper

Teriyaki Glaze

  • 0.5 cup Soy sauce
  • 0.25 cup Brown sugar
  • 0.25 cup Pineapple juice
  • 1 tbsp Cornstarch
  • 1 tbsp Water

Toppings

  • 0.5 cup Pineapple chunks
  • 2 tbsp Sesame seeds

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • In a large bowl, combine ground chicken, breadcrumbs, onion, garlic powder, ginger, salt, and pepper. Mix well.
  • Roll the mixture into 1-inch meatballs.
  • Place the meatballs on a baking sheet lined with parchment paper.
  • Bake for 15-20 minutes, or until cooked through.
  • In a small bowl, whisk together soy sauce, brown sugar, pineapple juice, cornstarch, and water.
  • In a saucepan, bring the sauce to a boil over medium heat. Reduce heat and simmer for 5 minutes, or until thickened.
  • Add the meatballs to the sauce and toss to coat.

Notes

Serve the meatballs over rice or noodles. Garnish with pineapple chunks and sesame seeds.
